For your specific goal—immune health + brain health + a healthy gut microbiome—I would build the food list around four overlapping properties:

Mediterranean dietary patterns are associated with better cognition and favorable gut-microbiome characteristics, although current research still can’t say that changing the microbiome alone will prevent neurodegenerative disease.
